Supervisor
Culinary Product and Process Department
Responsibilities
To support chefs and dietitians in relieving administrative tasks and ensuring smooth daily operations and hygiene standards
Assist in food research and development to aid the team in providing quality, cost-effective, and innovative food products and process solutions
Help in developing departmental standard operating procedures, managing recipes, and maintaining data to ensure accurate yields and methodologies for all relevant processes
Contribute to achieving departmental key performance indicators such as food quality, consistency, customer feedback, food safety, and food cost variance
Aid in maintaining the recipe database, including accurate yields, methodologies in both Chinese and English, and specification mappings
Participate in product development sessions and menu presentations
Assist with data input and maintain an organized filing system
Streamline product variations and complexities at the meal component level
Adapt to changes in a dynamic and evolving business environment
Requirements
Secondary School, tertiary vocational School, or Hotel School with a diploma in Food and Nutrition/Food Science/Food Safety
Basic culinary knowledge and understanding of the F&B industry, preferably with experience in retail food and packaging product development
Minimum of 2 years of practical exposure in culinary administration positions or related disciplines
Experience in retail food and packaging product development is preferred
Proficient in written and spoken English and Chinese
Strong problem-solving and analytical skills
Excellent proficiency in MS Office and statistical tools
Positive attitude and sense of responsibility
Approachable and enjoys working as part of a team
Capable of working under pressure and handling ad-hoc tasks
